Goat cheese transmontano is a Portuguese cheese originating from the Tras-os-Montes and Alto Douro region. It is a protected designation of origin, in accordance with the standards of the European Union. As the name implies, it is made with goat milk. The goat breed is Serrana. It is a cheese very hard paste, whitish in color, with some eyes. The curd is obtained using animal rennet. The maturation of this hard cheese at least 60 days, the cheese washed periodically during this process
